Mango Parfait Diabetic Recipe
Mangos are naturally sweet and serve very well as a dessert. Here they are layered with a cream made with soy milk and a nectarine, but if you prefer, use regular fat-free milk.
Mango Parfait

Ingredients
1/4 cup soy milk
1 white nectarine, peeled, pitted, and chopped
2 tablespoons powdered sugar
1 4-oz. carton fat-free sour cream or light dairy sour cream
2 ripe mangoes
Fresh fruit, such as sliced kiwi, raspberries, and/or strawberries (optional)
Directions
1. Combine soy milk, nectarine, and sugar in a blender container. Cover and blend until smooth; pour mixture into a medium bowl. Stir in sour cream. Cover and chill for 1 hour.
2. Pit and peel mangoes. Cut fruit into 1/2-inch cubes. For each serving, alternately layer mango pieces and sour cream mixture in a parfait glass or wine glass until glass is full, topping each serving with some sour cream mixture. If desired, garnish parfait with sliced kiwifruit, raspberries, and/or strawberries. Makes 4 servings.
